With over 20 years of culinary excellence, Chef Suk Bahadur is the visionary behind the Western heart of Shokuji. His journey through the world of high gastronomy has been defined by a deep respect for ingredients and a mastery of the flame.
Suk has spent two decades perfecting the nuances of Mediterranean, Italian, and Spanish cuisine. His impressive career includes tenure at some of the most prestigious establishments in the region, including the renowned Sabor and the legendary Ca Joan in Altea—restaurants celebrated for their uncompromising quality and culinary innovation.
At Shokuji, Suk brings this vast wealth of experience to our grill and fusion appetisers. Whether he is selecting the perfect cut of premium meat or crafting a Mediterranean dish with a Japanese twist, his touch is one of seasoned precision. Chef Ishwor Bahadur Gurung is the heart of the Japanese kitchen at Shokuji, bringing over 15 years of dedicated mastery to the art of sushi and sashimi. His journey is defined by a rare blend of traditional Japanese discipline and the avant-garde culinary spirit of Spain.
Ishwor’s formal training began in Bilbao, a city world-renowned for its culinary excellence. It was there that he honed his technical precision and learned to respect the ephemeral nature of the sea’s finest offerings. His career then took him to the high-pressure kitchens of the most prestigious sushi restaurants in Madrid and Bilbao, where he refined his skills alongside some of the industry’s most elite chefs.
At Shokuji, Ishwor transforms the freshest catch into edible art. His expertise goes beyond simple preparation; he understands the delicate chemistry of seasoned rice, the exact angle of the blade, and the perfect balance of flavours that define authentic Japanese cuisine.
